Mid Week Cake

 We are knee deep in our first week of school. The kids are virtual learning with their school. Natalie is a 5th grader and Freddy is a 2nd grader. It has been going really well, but mid-week we decided we needed some cake. 




Natalie requested a strawberry shortcake so we pulled out one of our most favorite recipes. It’s a Joanna Gaines recipe that she published in the Magnolia Journal years ago. I save all the journals, there is always something I want to flashback too. It never disappoints. We ate it with icecream this round but homemade whipped cream and berries is an absolute must try!


Cake 10. Strawberry Shortcake and Homemade Whipped Cream

 

Shortcake 

Cake Ingredients:

-1 1/3 cups flour

- 2/3 cup sugar

- 2 tsp. baking powder

- 2/3 cup milk

- 1/4 cup butter, softened

- 1 egg

- 1 tsp vanilla

- 3 cups berries


Directions:

preheat oven 350 degrees. Grease and lightly flour 8 inch square pan. in medium bowl combine flour, sugar, and baking powder. Add milk, butter, egg, and vanilla. Beat with a mixer on low until combined. Beat on medium 1 minute. spread batter in prepared pan. Bake 30 min or until toothpick comes clean. serve with berries and whip.



Whipped Cream 

-2 cups heavy cream

-1/4 cup powdered sugar

-1 tsp vanilla

- dash salt



A VG cake! You never can have enough! Again, make the whipped cream too! It is also so easy to make. There are not that many steps. It is a great cake for Natalie and I to make together. Now we are ready to take on the school year!
